Braga for moonshine. How to make puree

Even though you can chase away even weak wort, the quality of the final product will be far from ideal. In this article you will find all the necessary information to prepare perfect wort for homemade moonshine .

What is needed?

  • sugar (or other source of sugar),

  • water ,

  • fermentation vessel ,

  • Thermoregulator (recommended for stable temperature),

  • bentonite (for clarification).

1. Sugar wort proportions

Optimum hydro module this 1:4–1:5 (1 kg of sugar per 4–5 liters of water).
For example, on 20 liters of moonshine (40%) you need:

  • 20 kg of sugar ,

  • 80 liters of water ,

  • 400 g spirit yeast .

Calculation for a 30-litre barrel (80% full):

  • Water: 20l ,

  • Sugar: 5kg ,

  • Yeast: 100g .

2. Sugar inversion – is it worth it?

Inversion (cooking sugar with citric acid) speeds up fermentation but takes time. It can be skipped, especially on your first try.

3. Fermentation – Key Principles

  • Temperature: 26–31°C (lower slows down, higher kills yeast).

  • Time: 7–10 days .

  • Wort readiness:

    • bitter taste (lack of sweetness),

    • a distinct smell of alcohol,

    • no bubbles in the hydrolocator,

    • clear sediment at the bottom.

4. Purification (clarification and decantation)

  • Bentonite (1–2 tablespoons per 10 l of wort) helps to remove suspension.

  • Heating to 50°C removes residual CO₂.

5. Other types of wort

  • Fruity – requires ripe fruit, may ferment longer.

  • Grain – more complicated (starch saccharification necessary).
